【Kobe】A Luxurious Feast in Japan: Japanese Wagyu Beef

Have you ever heard of the word “Wagyu”?

Wagyu is known for its incredible tenderness and rich umami flavor, and some people even travel to Japan just to experience it!

Today, I’d like to introduce one of the most famous types of Japanese Wagyu “Kobe beef”.


What is Kobe Beef?

There are three major types of Wagyu in Japan: Kobe beef, Matsusaka beef, and Omi beef. Among them, Kobe beef is perhaps the most well-known.

 

 

Kobe beef comes from Tajima cattle, raised in the Tajima region of Hyogo Prefecture. Under strict quality control, only designated breeders can raise calves with the Tajima beef bloodline. Newborn calves are first registered as livestock and raised for about nine months before being sold to designated farms.

 

 

At these farms, the cattle are raised in pristine natural environments, with access to pure water sources and a carefully selected straw-based diet. They grow for around 28 to 32 months, developing the ideal meat quality. Only a small percentage of Tajima cattle pass the rigorous grading process to become certified Kobe beef.
